Ingredients (Servings: 5)

Chicken:

Chicken breasts (1,000g – raw)
Salt (2 tsp)
Black pepper (1.5 tsp)
Smoked paprika (2 tsp)
Chili powder (2 tsp)
Garlic powder (1 tsp)
Onion powder (1 tsp)
Cumin (1 tsp)
Dried oregano (2 tsp)
Dried thyme (optional)

Other:

Penne pasta (275g)
Yellow onion (300g)
Garlic (4 cloves)
Whipped Greek cream cheese (80g)
Fire roasted diced tomatoes (14.5 oz)
Parmesan (35g – grated)

Instructions

1. To cook the pasta (of your choice), simply add to boiling water and let boil until done.

2. Dice your chicken breasts into bite size pieces and place in a mixing bowl. Spray with oil then season the listed seasonings. Mix until well combined.

3. To sear the chicken, place it in an oiled skillet (preferably cast iron) set over medium heat and let cook until the chicken is cooked through. Once done, scoop into a bowl/plate and set off to the side.

4. In the same pan on medium heat, spray with oil then toss in the onion and let sear until caramelized. Once there, toss in the garlic to toast and mix together. Then turn the heat to low and add in the fire roasted tomatoes and whipped Greek cream cheese, and mix well.

5. Once mixed, toss in your chicken, cooked pasta, and parmesan, and mix everything together. 

6. To prep, simply add equal portions to your containers (or plate) and you’re ready to enjoy!
