Chicken breast (1,000g)
Salt (2 tsp)
Black pepper (1.5 tsp)
Garlic powder (1 tsp)
Onion powder (1 tsp)
Chili powder (1 tsp)
Smoked paprika (1 tsp)
Cayenne powder (1/4 tsp)
Yellow onion (200g – diced)
Garlic (4 cloves – minced)
Fettuccine pasta (275g)
Whipped Greek cream cheese (80g)
Milk (160g)
Original Laughing Cow cheese wedge (1)
Parmesan (25g – grated)
Buffalo sauce (50g)
To cook the pasta, add to a pot of boiling water and let boil until al dente. Drain once done.
For the chicken, dice into bite size pieces and season with the listed seasonings. Place in a skillet on medium-high heat and let sear until cooked through. Remove once done and dice into bite-size pieces.
With the chicken now in a separate bowl, take the pan off the heat, add a splash of water, and wipe out with a paper to clean. Then place the same skillet back on medium heat – spray with oil, then toss in the diced yellow onion to caramelize.
Once caramelized (after ~3-4 minutes), turn the heat to low, then add in the Laughing Cow cheese wedge, whipped Greek cream cheese, milk, buffalo sauce, and minced garlic – mix until well incorporated. Then toss in your cooked pasta and your chicken and mix together.
Place a serving of the pasta in each of your meal prep containers, and top with grated parmesan. Enjoy! 🙂
