93/7 ground turkey (2 lb.)
Taco seasoning packet (2)
Or:
Salt (2 tsp)
Black pepper (2 tsp)
Garlic powder (2 tsp)
Onion powder (2 tsp)
Chili powder (2 tsp)
Ground cumin (2 tsp)
Smoked paprika (1 tsp)
Oregano (2 tsp)
Yellow onion (200g – diced)
Red bell pepper (200g – diced)
Garlic (4 cloves – minced)
Frozen tater tots (450g)
Crushed tomato sauce (400g)
Whipped Greek cream cheese (80g)
Hatch chiles (4 oz.)
Pepper jack cheese (100g)
Pickled jalapenos (30g – optional garnish)
Cotija cheese (5g – optional garnish)
Cilantro (optional garnish)
Preheat the oven to 450 degrees (F).
Place the ground turkey in a skillet on high heat, then season with the seasoning. Let sear until the turkey is cooked through and is starting to brown, then remove from the pan into a separate bowl.
In the same skillet on medium heat, spray with oil, then toss in the diced yellow onion and diced red bell pepper. Once the vegetables are decently caramelized, toss in the minced garlic and stir in.
After ~1 minute, turn the heat to low and toss in the cooked turkey, crushed tomato sauce, Whipped Greek cream cheese, hatch chiles, and 50g of cheese. Hit with a pinch of salt, then mix well.
Once everything is mixed together, turn the heat off, then begin topping to the turkey with your tater tots in the pan (or transfer the turkey first into an oven safe dish). Once all tater tots are on top, spread over the rest of the grated cheese (the other 50g) and place in a 450 degree (F) oven for ~20 minutes, or until the tots are cooked to your liking.
Once done, remove from the oven, optionally top with pickled jalapeños, cotija cheese, and cilantro, and you’re ready to serve. Enjoy! 🙂
