Ingredients (Servings: 5)

Jerk Chicken:

Chicken breasts (850 g)
Green onion (~6 stems)
Red onion (150g)
Fresh ginger (~3 tbsp minced)
Fresh garlic (4 large cloves)
Soy sauce (50g)
Brown sugar (30g)
Apple cider vinegar (45g)
Habaneros (1 – or 2 if you like it spicy)
Fresh thyme leaves (~8 stems)
Allspice (2 tbsp)
Ground cinnamon (1 tsp)
Ground ginger (1 tsp)
Garlic powder (1 tsp)
Salt (1 tbsp)
Black pepper (1/2 tbsp)
Lime juice (1-2 limes)

Sauce:

Tomato paste (2-3 tbsp)
Reserved marinade (~8 tbsp)
Water or chicken stock (to help thin, if preferred)

Coconut Lime Rice & Black Beans:

Rice (200g)
Light unsweetened coconut milk (150g)
Chicken stock (250g)
Lime (1-2)
Black beans (200g)

Instructions

1. For the marinade, to a blender, add in the red onion, soy sauce, brown sugar, green onion, fresh ginger, fresh garlic, apple cider vinegar, fresh habaneros, fresh thyme, allspice, ground cinnamon, ground ginger, garlic powder, salt, black pepper, and lime juice. Blend until smooth, then ~5 tbsp of the marinade off to the side for later.

2. Flatten your chicken breasts and place in a mixing bowl or on a tray. Spray with olive oil and then pour in the chicken marinade (except for the 5 tbsp). Mix well, then let marinade for however long you have.

3. To cook the chicken, place into an oiled cast iron set on medium high heat. Let sear until both sides of the chicken are colored and the chicken reaches 165 (F) internally. Optionally, you can finish cooking the chicken in the oven. Remove once done and slice the chicken how you prefer.

4. To cook the rice, simply add the rice to a sauce pan along with the coconut milk and chicken stock. Add in the drained black beans, and let simmer until done.

5. To make the sauce, add the tomato paste to an oiled sauce pan on medium heat. Let sear for ~1 minute to cook the rawness off, then toss in the reserve/5 tbsp of marinade. Turn the heat to low, and mix well. Let simmer for 2-3 minutes.

6. To prep, you can add the rice and chicken on both sides of the bowl, or you can layer them on top. Either way, toss the serving with your sauce as well as an optional green onion. Enjoy 🙂
