93/7 ground turkey (1 lb.)
Fennel seed (1 tsp)
Garlic powder (1 tsp)
Onion powder (1 tsp)
Paprika (1 tsp)
Salt (1 tsp)
Black pepper (1 tsp)
Eggs (6 whole)
Egg whites (100g)
Cottage cheese (150g)
Red bell pepper (150g)
Sharp cheddar cheese (60g)
Preheat the oven to 375 degrees (F).
To a non-stick skillet on high heat, add in some oil, then toss in your turkey. Season with the listed seasonings, then mix and let sear until the turkey is cooked through. Once there, remove from the pan and set to the side.
In the same skillet on medium heat, spray with oil, then toss in the diced red bell pepper – let sear until color starts to form, then remove.
In a blender, combine 6 whole eggs, egg whites, and cottage cheese – blend until smooth.
Oil your casserole dish (we used a 9×13) with spray olive oil or nonstick baking spray. Then begin by placing cooked turkey and red bell pepper into each muffin container until all is used. Then pour over the egg and cheese mixture onto each one all of that is used too. Then finally, top each one off with grated cheese.
Place in an oven and bake for approximately 30 minutes, or until the eggs are cooked through. Once done, remove and you’re ready to enjoy! 🙂
