Ingredients

Beef

93/7 ground beef (2 lb.)
Taco seasoning packet (1)

Other

Sharp cheddar (70g – grated)
Pepper jack (70g – grated)
Carb Balance Mission tortillas (12)
Red enchilada sauce (200g)
Cilantro (garnish – optional)
Cotija cheese (garnish – optional)

Instructions

Place your ground beef in a bowl and season with a taco seasoning packet. Place in an oiled skillet on heat high and sear until cooked through. Then remove and set to the side.

To the side, grate both sharp cheddar and pepper jack cheese, then place in a mixing bowl.

To assemble, take a tortilla, add some beef and cheese, then roll up and place in an oiled baking tray. Repeat until all tortillas are used.

Once all tortillas are in the baking tray, spoon over red enchilada sauce until the top is fully covered. Then spread on top any remaining beef and cheese. Place in a 450 degree (F) oven for ~10 minutes.

Remove, then optionally garnish with cotija cheese and chopped cilantro. Then you’re ready to enjoy! 🙂
